Yup, squirrells are the choice. Very easy to do and do not require the tanning that larger mamals do. Also fish are easy too and I would do some of those too.

No, fish are much easier then birds. You could mess a fish up and still have it come out good. With todays technoligy in the fish taxidermy business, they are by far the easiest to do. With animals you have to worry about hair slippage, ear placement eye setting etc.. This is why fish mounting prices are cheaper then most other mounts. The only thing that may be difficult in fish taxidermy is the painting of a fish. But once you learn that part it's all down hill.
