I just got done drying about 15 pounds, let it go over night.......YUM YUM

mmm jerky. i never like the ground stuff, but this year my dad and his buddy took 4 hind quarters off big rutted up bucks and turnded the whole thing to jerky. mmm jerky. so that should last a while.
I like the ground stuff better. Easier to chew.....

Cool! I did my first batches of ground jerkey this year. I bought a lot of processing tools this year. I got the grinder, mixer, jerkey slicer, jerkey blaster, oven jerkey racks, and stuffer. I too started with the commercial kits. It turned out great. A couple guys at work said they did not like ground jerkey until they tried mine. Easier to chew, has more flavor, and it is easier to process. The strips are the same size every time.

Jim, try this mixture I'm sure you'll like it...it's way better than that packet stuff....
¼ C Worcestershire Sauce
¼ C Soy Sauce
1 Tablespoon tomato sauce
1 tablespoon vinegar
1 tablespoon sugar
¼ teaspoon dried chopped onion
¼ teaspoon dried chopped garlic
1 teaspoon salt

Yep, same here Jim. The kids like it alot better ground up too. Wish I had a better jerky shooter though, have to refill ours a lot to fill all the trays.
The packets walmart carries are pretty decent, but if you want a good packaged mix, try out hi mountain cures. Cabelas carries them. I cannot make the stuff fast enough.

Think I will try your recipe after I run out of packaged mixes. How much meat does that recipe cure?
