Venison Sausage???

What do you mix with your ground venison when making venison sausage. I was told you miss pork with it so it won't dry out.

It is a good idea to use pork shoulder..I like useing a 70/30 mix when I make mine....

When I get mine done, I usually get mine mixed with a third of pork. Alot of people down here get theirs mixed with half pork. That was too much, didn't like it as much. Wade

Thanks guys. I was told to go 50/50 with pork, I guess i'll go with a little less pork. What about seasonings? Some one told me to just use salt, pepper, and fennel? This sound right?
