Canibalism is legal where you are???
Seriously, I've never grilled a whole goose. What I have done though (with some ducks, and even a snow goose once) slice the breast meat into medallions, marinate them in a ziplock bag with olive oil and Montreal Steak Seasoning for a few hours (I prefer to marinate longer - say overnight) and then sear them on a hot grill.
For some other goose recipes look back at this thread: http://www.realtree.com/forums/showf...;page=0#449456
I am from Georgia, the south part of the US.I am proud to be a southerner by birth. Thanks for the tips on the recipe.
Cut the breast meat into thin strips(crossways) and thread them onto bamboo skewers which have been soaked in water for half hour. If you want, you can cut the breast meat in half first so that they are not too thick, plus you get more meat on the skewers.
Grill on BBQ about 5 to 7 minutes turning constantly. Last few minutes brush withy your favourite sauce. Cook until just pink....DO NOT overcook. Good luck.
