I need a good meatball recipe using beef. Need a sauce recipe also. Got volunteered to make them for a christmas party. I have only used my crockpot a few times. Help!!
Try this one:
Barbecue Meatballs
2 pounds ground beef
1 cup bread crumbs
1 teaspoon garlic powder
2 packages onion soup mix
2 teaspoons Worcestershire sauce
2 eggs
Sauce:
2 onions -- chopped
2 cans tomato paste (12 ounces total)
2 cloves garlic -- minced
1/4 cup Worcestershire sauce
1/4 cup red wine vinegar
1/2 cup brown sugar
1/2 cup sweet pickle relish
1/2 cup beef broth
2 teaspoons salt
2 teaspoons dry mustard
Combine first 6 ingredients and mix well. Shape into meatballs and brown in a skillet with 1 tablespoon of oil. Drain on paper towels.
Add all sauce ingredients to slow cooker and stir well. Add meatballs and cook, covered, on LOW for 5 to 6 hours (HIGH for 2 to 3 hours). Serve from the slow cooker.
This recipe yields about 60 meatballs.
This is an excellent recipe. Just substitute the venison with beef. Also if you make it the day ahead it taste better when you serve it. Very easy to do in the crock pot. I took this camping with us this past summer.
Italian Venison Meatballs and Sauce
Sauce:
1 can (16 oz) whole peeled / crushed tomatoes, un drained
1 can (6 oz) tomato paste
1/2 cup red wine
1 medium onion, chopped
2 cloves garlic, minced
3 tbsp olive oil
1 can (15 oz) tomato sauce
1 tbsp Italian seasoning
1 tbsp dried parsley flakes
1 tsp salt
1/2 tsp pepper
2 bay leaves
Meatballs:
1 1/2 - 2 pounds ground venison
1 egg, slightly beaten
1 clove garlic, minced
1 tsp Italian seasoning
1/2 tsp dried basil leaves
2 tbsp grated parmesan cheese
1/2 tsp salt
1/8 tsp pepper
3 tbsp bread crumbs
3 tbsp olive oil
In food processor or blender, puree tomatoes. Blend in tomato paste and wine; set aside. In Dutch oven, cook and stir onion and 2 cloves minced garlic in oil over medium heat until tender. Add tomato mixture and remaining sauce ingredients. Heat to boiling. Reduce heat to low and cook until sauce thickens and flavors are blended, about 2 hours, stirring occasionally.
To prepare meatballs: While sauce is cooking. In a medium bowl add meat, egg, 1 clove garlic minced, Italian seasoning, basil, cheese, salt, and pepper. Mix well. Add bread crumbs, 1 tbsp at a time. Shape meat mixture into about 30 meatballs depending on size.
In a large skillet, heat 3 tbsp oil over medium heat. Add meatballs; brown well on all sides, turning frequently. Remove meatballs with slotted spoon; drain on paper towels. Add meatballs to sauce during the last hour of cooking. Serve meatballs and sauce over hot cooked spaghetti.
