For you guys that love a good breakfast..
Potatoes O'Brien
4 med potatoes peeled and cubed
2 green onions chopped
1/2 green pepper diced
5 fresh basil leaf chopped
3 tablespoons bacon drippings
Fry diced potatoes in bacon dripping until golden brown... stirring frequently
to get even brownnes... Add remaining ingredients and further saute on medium
to high heat until peppers are tender...
Texas Breakfast Wraps
4 large eggs
2 tablespoons light sour cream
1/4 cup green onions chopped
pinch ground black pepper
1 large flour tortilla (10-inch)
1 teaspoon olive oil
1/2 cup diced chorizo
1/2 cup cheddar cheese shredded
3 tablespoons thick and chunky salsa
medium or hot
In a medium bowl, whisk together eggs, sour cream, green onions
and pepper; set aside....
In a large (10 inch) nonstick skillet over medium-high heat, cook
tortilla until heated through, about 1 minute per side.... Transfer to a
plate and cover to keep warm..
Reduce the heat to medium and add oil to the skillet... When the oil
is hot, add chorizo and cook until lightly browned, about 1-1/2
minutes... With a slotted spoon, transfer the chorizo to a small dish.
Pour the egg mixture into the skillet, using a spatula to lift the
edges of the cooked egg and letting the uncooked egg run underneath...
When the eggs are completely set, turn the omelet over. Sprinkle
with the reserved chorizo, then with cheese. Remove the pan from the
heat...
Uncover the tortilla and spread with salsa. Slide the omelet on
top. Roll the tortilla and omelet up together...
French Toast
2 eggs slightly beaten
1/2 cup milk
1/4 teaspoon salt
6 slices bread preferably day-old
fat for frying
maple syrup for topping,
optional
OR confectioners' sugar for topping
OR tart jelly for topping
Combine eggs, milk and salt.
Dip day-old bread into milk-egg mixture (enough for 4-6 slices of
bread.).
Fry bread slices in small amount of hot fat until golden brown....
Serve hot with maple-flavored syrup, confectioners' sugar, or tart
jelly....
