When quartering deer in hot weather, wash away excess blood and immediately place the quarters in a large cooler of ice. It’s best to lay a shallow layer of ice in the bottom of the cooler, place a quarter or two of meat on top of that layer, and then cover that meat with more ice. Make sure the drain plug to your cooler is open if the meat will be on ice for more than a few hours—your ice will keep longer this way, and bloody water will be drained from the cooler, rather than collected around the meat.
