I’m a huge fan of processing my own game for a number of reasons. First, I know I'm putting my own animal in the freezer, and I'm not going to end up with a mixture of several deer that were dropped off at the processor that day. Second, I know the meat has been treated properly from start to finish, kept clean, and at the proper temperature. And third, I can customize the processing to fit my family’s preferences. You can do the same. Do you like to eat more roasts? Cut your hindquarters that way. Prefer steaks? Cut and freeze them in family sized portions. Like a little bacon or beef fat ground into your venison? Simple enough when you are doing it yourself.

You don’t need a ton of equipment to process your own meat. I’ve been using Weston equipment for years now, and it's some of the best on the market. Don’t want to buy everything you need at once? Get together with some of your hunting buddies. Let each person purchase one or two pieces and trade them out when you need them. Better yet, get everyone together for a fun evening of processing your wild game. It’s a great way to extend the fun of hunting camp.

So what equipment do you need? My favorites won't all fit in one list, so I'm breaking this into a two-part series. Here are the items for part one, and how I use them. Part two will follow on Friday’s Timber2Table with the rest of the new line.

Vacuum Sealer

One of the most used tools in our processing kitchen is the vacuum sealer. The old freezer paper and tape method of wrapping meat for the freezer works okay, but the freshness and flavor of the food starts to suffer after a few months. Push the time in the freezer closer to a year, and the quality really declines.

Vacuum sealing removes the air from around your game or fish, keeping it fresh tasting for two years or longer. Having a vacuum sealer handy also allows you to buy bulk items and separate it into meal-sized portions, and that saves you money. Between that and cutting back on wasted and thrown-away food due to freezer burn, a vacuum sealer is one piece of equipment that will pay for itself.

The Weston Realtree EDGE Vacuum Sealer is a great combo of size and power.

This new Weston Realtree EDGE Sealer is compact, features a powerful 110-watt motor, easy-to-use controls, and built-in storage and cutter for economical bulk rolls of bags, making cutting your bags to a custom size a breeze.

The built-in bag storage and cutter work well for custom bag sizes.

The vacuum sealer comes with several pre-cut and one bulk roll of bags to get you started. It is compatible with most brands of vacuum sealer bags, making restocking easy.

5 QT Slow Cooker

There is nothing better after a cold day afield than coming home to a hot, ready-to-eat meal. This time of year finds us using our Weston Slow Cooker several times a week. Perfect for roasts, soups, stews and more, the Weston Realtree EDGE 5 QT cooker holds up to 4.5 pounds of meat, making it big enough to feed even a large hunting camp or family.

The Weston Realtree EDGE slow cooker is the perfect size for a family or deer camp.

It features a dishwasher-safe stoneware pot and glass lid, making clean up easy. It comes with a Lid Latch strap, so you can transport it without fear of your meal splashing into your floorboard.

The Lid Latch strap prevents spills while travelling.

The controls are easy to use and feature high, low and keep warm settings so your dinner is hot and ready when you are.

High, low and keep warm settings make timing your dinner easy.

Meat Grinder

Another piece of most-used equipment has to be our meat grinder. We love wild-game burgers and sausage, so our grinder sees a lot of use. The new Weston Realtree EDGE model features a powerful 650-watt motor with forward and reverse operation to handle any grinding chore you throw at it at the fast rate of 2 to 3 pounds per minute.

Enjoy making your own sausage? The grinder comes with small, medium and large-sized grinding plates, meaning you can customize the texture of your grind to the recipe you are using.

Each piece of the Weston Realtree line comes with a Realtree EDGE cover.

The grinder comes with a sausage-stuffer kit with multiple-sized tubes, making it the perfect tool for preparing brats, summer sausage, breakfast links or snack sticks. Just attach the proper tube for the casing you are using, thread the casing over the tube, and turn on the machine. It’s that simple.

The Weston Realtree EDGE Grinder comes with three sizes of sausage-stuffing tubes.

One of my biggest requirements when choosing any kitchen or processing appliance is ease of clean up. This grinder passes the test with flying colors. All working parts easily detach from the motor with the push of a button, and disassembly is simple, making washing easy and fast. The plastic stomper, used to safely push the meat into the grinder, doubles as storage for grinding plates and cutting blades when not in use.

As with all of the new lineup, the meat grinder comes with a custom-sized cover in Realtree EDGE camo to keep it clean and dust free between uses.
