I’m a huge fan of processing my own game for a number of reasons. First, I know I'm putting my own animal in the freezer, and I'm not going to end up with a mixture of several deer that were dropped off at the processor that day. Second, I know the meat has been treated properly from start to finish, kept clean, and at the proper temperature. And third, I can customize the processing to fit my family’s preferences.
