Not much goes to waste around here. One great way to use up leftover wild game is in soup. If you have some leftover turkey, add some fresh vegetables and barley for this recipe. We use quick barley, because, as its name implies, it cooks more quickly than unprocessed barley.

With plenty of vegetables and delicious wild turkey, this soup is perfect any time of year.

Ingredients

2 cups cooked wild turkey, cut into cubes

2 stalks celery, finely chopped

2-3 carrots, sliced

1 medium onion, chopped

2-3 cups baby spinach leaves

6 cups chicken or turkey broth

2 cups water

3/4 cup quick-cook barley

1 chicken bouillon cube

Cooking Instructions

Start by chopping and dicing the vegetables and wild turkey.

Fresh ingredients make this a great soup any time of year.

Add the turkey, stock, water, bouillon cube, and barley. Bring to a boil, then reduce the heat and simmer, covered for 30 minutes.

Add the fresh spinach and continue to cook, covered, for another 10 minutes.
